Alkalized cocoa powder, also known as Dutch-processed cocoa, is cocoa powder that has been treated with an alkaline solution, like potassium carbonate, to reduce its acidity and mellow its flavor. This process results in a darker color and smoother taste compared to natural cocoa powder.

Processing:
Natural cocoa powder is made by grinding the dried solids left after cocoa butter is extracted from roasted cocoa beans. Alkalized cocoa powder undergoes an additional step where it’s treated with an alkaline solution, which neutralizes some of its acidity.

Acidity and pH:
Natural cocoa powder has a relatively high acidity, with a pH typically between 5 and 6. Alkalization raises the pH, making the powder less acidic.

Color and Flavor:
The alkalization process darkens the color of the cocoa powder and reduces bitterness, resulting in a smoother, more mellow flavor.

Solubility:
Alkalized cocoa powder tends to dissolve more easily in liquids compared to natural cocoa powder.

Baking:
In recipes that use baking soda (which needs an acidic environment), natural cocoa powder is preferred. If a recipe uses baking powder, alkalized cocoa powder is often recommended
